
Mom's Pork (or Chicken) and Cucumber Soup
Ingredients
1 pork loin or 1/2 chicken
1 tablespoon dried shrimp or dried scallops
kernels from 1 ear of corn
1 chopped cucumber
2 chopped carrots
1/4 cup cilantro
one small piece ginger
2 cloves garlic
2 tablespoons white wine
salt to taste
Dipping Sauce
2 cloves garlic
1/2 teaspoon sugar
2 tablespoons vinegar
2 tablespoons soy sauce
drizzle of sesame oil
Directions
1) Put the pork or chicken in a pot with garlic, ginger, dried shrimp/scallops and wine. Cook the meat on high heat until the meat changes color (medium done).
2) Add 2-3 cups of water and carrots to the pot. Cook pot over medium heat until contents begin to boil, about 10 minutes (pork slices) and 20 minutes (chicken thighs).
3) Add cucumber and carrots to the pot and let cook for 10 minutes.
4) Add cilantro and serve.
5) For sauce, mix garlic, sugar, vinegar, and soy sauce together in a bowl. Drizzle some sesame oil into the bowl and use as a dipping sauce for the meat.

Comments: This is my mom's recipe so of course it's great :) My mom doesn't measure anything so all of the measurements are guesstimations. This makes a light and healthy, yet flavorful soup.
