
Mujaddarrah - my version
Ingredients
6 tablespoons grapeseed oil
2 large white onion, sliced into rings
1 1/3 cups uncooked green lentils
3/4 cup uncooked long-grain brown rice
1 1/2 tablespoon cumin
3/4 teaspoon cinnamon
salt and pepper to taste
1/4 cup plain yogurt or sour cream
Directions
1) Heat the grapeseed oil in a large skillet over medium heat. Stir in the onions, and cook until browned. Remove from heat, and set aside.
2) Place lentils in a medium saucepan with enough lightly salted water to cover. Add cumin, cinnamon, salt and pepper to lentils. Bring to a boil, reduce heat, and simmer about 45 minutes.
3) Place rice in a medium saucepan with enough water to cover. Bring to a boil, reduce heat, and simmer 20 minutes.
4) Mix half the onions into the lentil mixture. Add desired amount of brown rice to lentils. Top lentil/rice mixture with yogurt or sour cream and remaining onions to serve.

Comments: I really like lentils, and I really like onions so, naturally, I really like this dish! My only issue with it is that it takes awhile for the lentils to get to the state that I like them (mushy). Also the onions take a long time to brown (at least they did for me). I've made this dish twice and paired with tzatziki sauce last time. Yum!
