Food: Okra Curry


Okra Curry

Ingredients

16 oz frozen okra
6 0z frozen chopped onions (**saves the tears :) )
1 container fresh small tomatoes
1 container fresh mushroom
2 garlic cloves
a small piece of ginger (can use ginger powder as well)
2 tablespoons of oil
1 tsp cumin
1/2 tsp ground coriander
1/2 tsp curry powder
dash of paprika
salt and pepper to taste
Directions
1) Heat oil, garlic, and onions in a skillet
2) Slice tomatoes and mushrooms and add to skillet; cook until soft
3) Add cumin, coriander, curry powder, ginger, and paprika to mixture
4) Add frozen okra and cook until soft
5) Serve over rice and mix in a spoonful of yogurt to dish

Comments: I really liked how this dish turned out. The mix of spices were very flavorful but not too overpowering, and just enough heat for me (which isn't very much at all). I think adding the tomatoes is definitely key as it adds some acidity which complements the okra nicely. I like mushy okra, but if one does not then be forewarned that this is a mushy, soft, okra-y dish! Will definitely make again. Inspired by the recipe below.
