3 ripe bananas
2 cups rolled oats
1 cup dates, pitted and chopped
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 cup dates, pitted and chopped

1/2 teaspoon cinnamon
Directions
1) Preheat oven to 350 degrees F (175 degrees C).
2) In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes.
3) Drop by teaspoonfuls onto a parchment paper lined cookie sheet.
4) Bake for 20 minutes in the preheated oven, or until lightly brown.

Comments: I make these on Sunday and eat them as breakfast for the rest of the week. These are great for having a healthy and filling breakfast on the go. The riper the bananas the sweeter the "cookie". This is really more of a breakfast bar (and a healthy one at that) than a cookie. Taken for what it is, it's really quite tasty -- a bit like banana bread. And best of all there is no sugar or wheat :)
